when viewing a profile, click the "add as a friend" link under the profile picture of the person. a friend request will be sent to the person and if s/he accepts it, s/he will be listed on your friends list.
if you want to delete someone from your friends, go to your friends list first. when you are viewing your friends list, you will see the "delete from friend list" button, under the profiles. click that button under the friend whom you want to delete from your friends list.
it is all up to you! you can manage who is allowed to see your friends by changing your privacy settings, anytime! to do that, go to your "privacy settings". when you are in your privacy settings you will see "friends" option under the "profile information" section. if you uncheck the box next to "friends" your friends list will be invisible. That is it. now your friends list will not be displayed on your profile.
